Slow Cooker Chicken for Tacos, Burritos & Nachos

I don't know about you, but I love using my slow cooker in the summer! It means I can toss the food in earlier in the day and come dinner time, it takes minimal effort to get dinner onto the table. I threw a couple of things together for this recipe to see how we'd like it and it worked out great!

What you need:
  • Boneless, skinless chicken breasts (I used two very large ones)
  • Canned black beans, do not drain or rinse (I used two 15 oz. cans)
  • Taco seasoning packet (I used one Lawry's Taco packet)
  • Optional: Salsa, shredded cheese, onions, guacamole, shredded lettuce, chopped tomatoes, tortillas, taco shells, tortilla chips
What you do:
 
Put the black beans and taco seasoning into the slow cooker and mix in. If you'd like to add salsa, you can add it now or use it later. Add the raw chicken. Cover and cook on low for 4-6 hours or high for 2-3 hours. Once the chicken is cooked, pull it out and pull it apart. Put it back into the slow cooker and stir it up. Serve using any of the optional ingredients.
